CEO James Spragg asked me to work with him as Global Brand Director and board member to re-establish the heritage Café Rouge brand, which had been inconsistently passed around different shareholdings and opinions since 1989. Over 18 months a fantastic team of chefs, procurement, operations, architects, creators, agencies and marketers ruthlessly refurbished and relaunched 70 restaurants for the investors, made 9 differing menus into one across 130 sites and ensured annual sales rose by 39% to £399m.  I so hope Café Rouge manages to retain some of its former glory for future generations and if you get the chance to visit the flagship site at St Pauls, or at Brighton Marina, I hope you agree the interior design is very special.
