Working directly with the Graphite PE board and the family-focused brand founders, childhood best friends Will Beckett and Huw Gott, was so very interesting.  Their brief to me was to relaunch their one-year-old Edinburgh restaurant and produce the launch plans for the forthcoming New York site which had been in their dream pipeline for over five years.  As Michael Markowitz says, Hawksmoor IS a very special brand, made up culturally of many extraordinary minutiae including amazing Michelin star chefs, award-winning cocktail curators, empathetic in-house designers and teams who have worked together with trust and respect for many years, a sure-fire recipe for long term success. I wish them a most wonderful launch in New York and miss their ethically sourced, British grass-fed, dry-aged, charcoal cooked, steak as well as the working breakfasts at Guildhall immensely.
